Chef Dimitris Katrivesis is inspired by "Tradinovation," the gastronomic nexus where tradition and innovation meet, to present dishes that boldly celebrate the culinary heritage of the Cyclades by combining local ingredients, traditional recipes, centuries-old cooking techniques, modern flavour combinations, and experience gained from his travels around the world.

Commenting on the new culinary experience, Head Chef Dimitris Katrivesis shared, “Our mission is to create an evocative culinary experience in harmony with Greek traditions dominated by bold flavours and aromas that match the unique views of Santorini’s caldera in intensity and seductiveness. The use of robata (open fire cooking) dominates our menu, and we have incorporated Greek “moirasma” which is a style of dining that focuses on a “sharing is caring” attitude. The experience is intertwined with Greek culture and celebrates the purity and authenticity of Greek cuisine through a modern perspective”.

Small plates in the tapas style are served by Chef Katrivesis, who draws his ingredients from the sea and beaches of Santorini.

MAVRO, meaning "black," invites guests to indulge in sweet and savoury culinary delights within its refined ambiance of ethereal elegance, taking its name from the hotel's unconventional all-black architecture, which pays tribute to the island's volcanic heritage.

The restaurant has introduced three new tasting menus dubbed "Full Moon," "Dark Side of the Moon," and "Half Moon" to take diners on a gastronomic journey through the phases of the moon. There are three different degustation menus: the Full Moon Experience, which has eight courses, the Dark Side of the Moon Experience, which has six courses and is vegan, and the Half Moon Experience, which also has six courses. Cooked over an open fire in homage to traditional Cycladic dining customs, the fresh seafood featured in each encounter is the result of a labour of love put in by local fisherman from the surrounding towns. In addition, the restaurant's all-black decor served as inspiration for the meals, so customers can anticipate some bold nods to the establishment's signature colour scheme.

MAVRO provides a front-row seat to one of the world's most stunning settings, perched on one of the highest points of the Santorini caldera. Eat in the open air and take in the unrivalled panoramic views of the Aegean Sea, something of a rarity on this popular island.

The bar menu also includes traditional sweets with a chef's twist, as well as mezze, small dishes, and platters, all prepared in a Mediterranean style and suited to be shared. The menu also features superb amberjack fish from the Cyclades islands and Carabineiro (giant deep-sea scarlet prawns) fresh from the seas and coastlines of Santorini.
